How Long to Cook Lasagna

Lasagna timing depends on more than the oven temperature: whether the dish is covered, whether the noodles were pre-boiled, and whether it started frozen all change the number by 20 minutes or more. Undercooked lasagna has crunchy noodle edges and a runny center; overcooked lasagna dries out and the cheese scorches before the middle heats through.

Steps

  1. 1Preheat the oven to 375°F (190°C), the standard temperature for a 9x13-inch lasagna.
  2. 2Assemble the lasagna in a 9x13-inch baking dish, ending with a layer of sauce and cheese on top.
  3. 3Cover the dish tightly with foil (tent it or spray the underside with oil so the cheese doesn't stick) and bake for 45 minutes.
  4. 4Remove the foil and bake uncovered for another 15-20 minutes, until the cheese is browned and the sauce is bubbling at the edges.
  5. 5Insert an instant-read thermometer into the center; it should read at least 165°F (74°C).
  6. 6Let the lasagna rest for 15-20 minutes before cutting so the layers set and slices hold together instead of sliding apart.

FAQ

How long does lasagna take at 350°F instead of 375°F?

At 350°F, plan on about 55-60 minutes covered and 20 minutes uncovered, roughly 10-15 minutes longer total than at 375°F.

Do no-boil noodles change the bake time?

Not dramatically, but they need enough sauce moisture to soften fully. A lasagna built with no-boil noodles and a standard amount of sauce may need an extra 5-10 minutes covered compared to one made with pre-boiled noodles.

Can I bake lasagna straight from the freezer?

Yes, but it takes about double the time: roughly 90 minutes covered at 375°F followed by 20-25 minutes uncovered, and the internal temperature should still hit 165°F at the center.

Why is the center of my lasagna still cool after 45 minutes?

A deep or tightly packed lasagna (more than 5 layers, or a dish deeper than 3 inches) needs more time in the covered stage since heat has farther to travel to the middle; add 10-15 minutes covered before uncovering.

Should I let lasagna rest before cutting?

Yes, 15-20 minutes minimum. The cheese and sauce are still liquid right out of the oven, and cutting too soon causes the layers to separate and spill instead of holding a clean slice.
