How to Boil Green Beans

Green beans go from crisp to army-green mush in about a minute of overcooking, so the boiling time depends entirely on how tender you want them and whether you plan to shock them in ice water afterward.

Steps

  1. 1Trim the stem ends off the green beans (the tail end is fine to leave on).
  2. 2Bring a large pot of water to a rolling boil and salt it generously, about 1 tablespoon of salt per 2 quarts of water.
  3. 3Add the green beans in a single batch so the water returns to a boil quickly.
  4. 4Boil uncovered for 4-5 minutes for crisp-tender beans that still have a snap, or 6-7 minutes for fully tender beans with no crunch.
  5. 5Test one bean by biting into it a minute before the time is up, since bean thickness changes the timing.
  6. 6Drain immediately and, if not serving right away, transfer to a bowl of ice water for 2-3 minutes to stop the cooking and lock in the color.
  7. 7Drain the ice-bathed beans well and pat dry before reheating with butter, oil, or sauce.
