How to Eat Crawfish

Boiled crawfish looks intimidating in a pile on the table, but the actual eating technique is just three moves repeated fast: twist, peel, suck. Once your hands know the motion you can clear a pound in a few minutes without a knife or fork.
Steps
- 1Grab the crawfish with one hand on the tail and one hand on the head, right where they meet.
- 2Twist and pull to separate the tail from the head in one motion; this should take almost no force if it's cooked properly.
- 3Set the head aside for later (or suck it now, see below) and hold the tail with the shell's underside facing up.
- 4Pinch the sides of the tail shell near the top and squeeze slightly to crack it, then peel the top two or three shell segments back and away from the meat.
- 5Pinch the exposed tail meat between your thumb and forefinger, right at the base, and pull it straight out of the remaining shell in one piece.
- 6Pick up the head, tip it toward your mouth, and suck out the yellow-orange fat and juices pooled inside; this is where most of the seasoning and flavor concentrates.
- 7Discard the empty shell and head, wipe your fingers if needed, and repeat with the next one.
Common mistakes
- Trying to eat the tail meat without twisting off the head first: the head holds the fat, and skipping it means missing most of the flavor.
- Peeling from the bottom of the tail instead of the top: starting at the top segments makes the shell come away in fewer pieces.
- Pulling the tail meat out sideways instead of straight: it tears the meat and leaves half of it stuck in the shell.
- Avoiding the head because it looks unappetizing: the fat inside is what carries the boil's spice and butter flavor, not the shell meat alone.
- Over-squeezing the tail before peeling: too much pressure crushes the meat along with the shell.
Equipment
- Newspaper or a covered table surface
- Napkins or wet wipes
- A bowl for shells
- Optional: crab crackers for stubborn heads
FAQ
Do you eat the whole crawfish, shell and all?
No, only the tail meat and the fat/juice inside the head are eaten; the shell, legs, and gills (the feathery parts inside the head) are discarded.
Why is sucking the head part of eating crawfish?
The head holds the tomalley-like fat that absorbs the boil's seasoning, butter, and spice; it's considered the most flavorful part by most people who grew up eating crawfish boils.
Is it normal for some crawfish to have straight tails instead of curled tails?
A curled tail means it was alive when boiled and is safe to eat; a straight, uncurled tail usually means it was dead before boiling and should be set aside.
How many pounds of crawfish should one person eat?
A hearty single serving is typically 3 to 5 pounds of whole boiled crawfish, since the yield of actual tail meat is only about 15 percent of the total weight.
What do you do with the peeled tail meat if you're not eating it immediately?
Refrigerate peeled tails in an airtight container for up to 2 days; they work well tossed into pasta, étouffée, or a quick crawfish boil dip.
