How to Make a Matcha Latte

A good matcha latte comes down to two things most people skip: sifting the powder and whisking it into a paste before adding any liquid. Skip either step and you end up with clumps floating in milk instead of a smooth, uniformly green drink.

Steps

  1. 1Sift 1-2 teaspoons of matcha powder into a bowl or mug using a fine-mesh strainer to break up clumps.
  2. 2Add 2-3 tablespoons of water heated to 175°F (80°C), not boiling.
  3. 3Whisk in a rapid W or M motion with a bamboo whisk (chasen) or a small milk frother until the matcha forms a smooth, frothy paste with no dry clumps, about 20-30 seconds.
  4. 4Steam or heat 1 cup of milk (dairy or oat both work well) until warm but not scalded, around 150°F (65°C).
  5. 5Froth the milk if you want foam, using a frother, French press, or by shaking it in a sealed jar for 30 seconds.
  6. 6Pour the warm milk over the matcha paste, or pour the paste into the milk, and stir gently to combine.
  7. 7Sweeten with honey, simple syrup, or sugar to taste, stirring it into the paste before adding milk so it dissolves evenly.

What's the ideal matcha-to-water ratio for a latte?

1-2 teaspoons of matcha to 2-3 tablespoons of water makes a concentrated paste strong enough to still taste through 1 cup of milk.

Can I use a regular whisk instead of a bamboo one?

A small metal whisk or milk frother works fine, the bamboo whisk just has finer tines that break up clumps a bit faster.

Why does my matcha latte taste bitter?

Water that's too hot (above 175°F) or matcha that's been whisked too long can both pull out bitter compounds, keep whisking under 30 seconds.

Hot or cold milk, which is better for a matcha latte?

Both work. For iced versions, make the matcha paste with hot water as usual, then pour it over cold milk and ice so it doesn't clump.

How long does matcha powder stay fresh once opened?

About 4-6 weeks in an airtight container in the fridge, away from light, before the color dulls and flavor fades.
