Canning Heat Processing

Heat processing is the step in home canning where filled, sealed jars are submerged in boiling water or heated inside a pressure canner for a specific time. The heat destroys the microorganisms that cause spoilage and drives air out of the jar, which pulls the lid down into a vacuum seal as the jar cools. Without the right heat and time for a given food, jars can seal without actually being safe, which is why processing charts specify exact minutes rather than 'until it looks done.'

Varieties

Water bath and steam canning are functionally interchangeable for high-acid foods and follow the same time charts, but pressure canning is not interchangeable with either one; it operates at a higher temperature that only a sealed, pressurized vessel can reach, and it's the only method proven safe for low-acid foods.

Buying tips

A dial-gauge pressure canner needs its gauge tested for accuracy every year, usually free through a local extension office; weighted-gauge canners don't need this check. For water bath canning, any large pot with a lid works as long as it's deep enough to cover jars by 1 to 2 inches of water and has a rack on the bottom to keep jars off direct heat.

Once processing time is complete, let jars sit undisturbed for 12 to 24 hours before checking seals. A sealed lid curves slightly downward and doesn't flex when pressed. Remove the ring, label with the date, and store sealed jars in a cool, dark place away from direct heat; properly sealed and processed jars keep for 12 to 18 months with best quality.

How to use

Match the method to the food's acidity: water bath or steam canning for jams, fruit, pickles, and acidified tomatoes; pressure canning for plain vegetables, dried beans, meat, poultry, stock, and soups. Always start timing only once the water is at a full rolling boil (water bath) or the canner has reached and held the target pressure (pressure canning), and adjust both altitude and headspace as the recipe specifies.

Why does altitude change processing time?

Water boils at a lower temperature as altitude increases, so the same processing time delivers less heat. Recipes typically add 5 minutes to water bath processing above 1,000 feet and increase pressure canner PSI above 1,000 feet, with specific adjustments listed on USDA or extension-published charts.

Can I shorten processing time if the food already looks fully cooked?

No. Processing time is calculated to heat the coldest point inside the jar, usually the center, long enough to destroy spoilage organisms, not to finish cooking the food. Visual doneness has no bearing on jar safety.

What happens if a jar doesn't seal after processing?

Refrigerate it and eat the contents within a few days, or reprocess within 24 hours with a new lid and the full original processing time. An unsealed jar left at room temperature is not safe to store.

Is it safe to can in the oven instead of water or steam?

No. Oven canning doesn't heat jars evenly or reliably reach the temperatures needed for a safe seal, and dry heat can cause jars to crack or explode. It's not a recognized substitute for water bath, steam, or pressure processing.
