Spider Roll

A spider roll is a makizushi (rolled sushi) built around a whole tempura-fried soft-shell crab, usually paired with cucumber, avocado, and lettuce or sprouts, then rolled so the crab's legs poke out past the ends of the roll. It's an American sushi-bar invention rather than a traditional Japanese roll, developed to use the whole crab, shell and legs included, once it's deep-fried crisp enough to eat entirely.

Varieties

Some sushi bars serve an 'inside-out' (uramaki) version with rice on the outside and sesame seeds pressed on, while others keep the nori on the outside as a traditional maki roll; both use the same tempura crab filling, the difference is purely in how the roll is rolled.

Buying tips

If frying your own, look for frozen soft-shell crabs labeled 'cleaned' (gills and apron already removed) sold in Asian grocery stores; thaw fully and pat dry before battering so the coating stays crisp. For imitation crab, check that it's the flake or leg-style kani rather than surimi salad mix, which is already dressed and too wet for rolling.

Substitutes

Storage

Spider rolls are best eaten within an hour of rolling since the tempura crust softens fast against the moist rice. If you must hold leftovers, store uncut or sliced rolls in an airtight container in the refrigerator for up to a day; expect the crab to lose its crunch. Do not freeze assembled rolls, the rice turns hard and the avocado browns and separates.

How to use

Served as a standalone sushi order, cut into 6-8 pieces and eaten with soy sauce, pickled ginger, and wasabi. Leftover components (fried crab, cucumber, avocado) work well repurposed into a rice bowl or a crunchy roll the next day rather than trying to re-crisp a whole sliced roll.

What it pairs with

Pairs well with a light ponzu or spicy mayo rather than heavy soy sauce, which can overwhelm the fried crab. A cucumber salad or miso soup on the side balances the richness of the tempura.

Nutrition

A full spider roll (about 8 pieces) typically runs 400-500 calories, driven mostly by the deep-fried crab and white sushi rice; it's higher in fat and sodium than a plain vegetable or sashimi roll because of the tempura batter and accompanying eel sauce or spicy mayo.

FAQ

Can you eat the whole crab in a spider roll, shell and all?

Yes. Soft-shell crabs are harvested right after molting, before the new shell hardens, so once deep-fried the entire crab, legs and shell included, is edible and crunchy.

Why do the legs stick out of the roll instead of being tucked inside?

It's intentional presentation: leaving the fried legs hanging past the nori shows the whole crab was used and gives the roll its 'spider' look and extra crunch at each bite.

Is a spider roll raw fish?

No, the crab is deep-fried and fully cooked. The roll typically contains no raw seafood, which makes it a common choice for people who want sushi-style food without eating raw fish.

What's the difference between a spider roll and a soft-shell crab roll?

They're usually the same thing; some restaurants use 'soft-shell crab roll' on the menu instead of 'spider roll,' though a few define spider roll specifically as the version with legs protruding from both ends.
