Chicken Biryani Recipe

  • 3 cups basmati rice
  • 2 lb bone-in, skin-on chicken thighs
  • 1 cup plain yogurt
  • 2 tbsp garlic, minced
  • 2 tbsp ginger, grated
  • 3 tbsp biryani masala spice blend
  • 3 large yellow onions, thinly sliced
  • 1/2 cup ghee or vegetable oil
  • 1 set whole spices (bay leaf, cardamom, cinnamon, cloves)
  • 1/4 tsp saffron threads
  • 1/4 cup whole milk, warmed
  • 1/2 cup mint and cilantro, chopped

Instructions

  1. 1Marinate the chicken with the yogurt, garlic, ginger, and biryani masala for at least 1 hour, or overnight in the fridge.
  2. 2Rinse the basmati rice until the water runs clear, then soak for 30 minutes and drain.
  3. 3Heat half the ghee in a wide pan and fry the sliced onions, stirring frequently, until deeply golden and crisp; remove and set half aside for garnish.
  4. 4In the same pan, add the marinated chicken and cook over medium heat until nearly cooked through, about 15 minutes, using the remaining fried onion in the sauce.
  5. 5Meanwhile, soak the saffron threads in the warm milk.
  6. 6Bring a large pot of well-salted water with the whole spices to a boil, add the drained rice, and cook until about 70% done, still firm at the center, then drain.
  7. 7Spread the partially cooked rice evenly over the chicken in the pan.
  8. 8Drizzle the saffron milk over the rice, scatter the reserved fried onions and chopped herbs on top, and dot with the remaining ghee.
  9. 9Cover tightly with a lid (sealing the edge with foil or dough if needed) and cook on very low heat for 25-30 minutes.
  10. 10Remove from heat and let rest, still covered, for 10 minutes before gently fluffing and serving.

Tips & variations

  • Fried onions (birista) can be made a day ahead and stored at room temperature in an airtight container, they crisp up further as they cool.
  • For a smokier flavor, place a small piece of hot charcoal in a foil cup on top of the layered biryani, cover, and let it smoke for a few minutes before the final dum step (the dhungar method).
  • A dough seal (atta seal) around the lid gives the most reliable steam-tight seal if you don't have a heavy lid.

Storage & reheating

Refrigerate up to 4 days. Reheat covered in a low oven or microwave with a splash of water to restore moisture. Freezes well for up to 2 months in an airtight container.
