No-churn mango ice cream made with sweetened condensed milk and ripe mango puree, no ice cream maker required.

Sweetened condensed milk's sugar content lowers the freezing point enough that the mixture stays scoopable without an ice cream maker constantly churning air into it, whipped cream folded in does that job instead.

  6. 6Freeze at least 6 hours, ideally overnight, before scooping.

Tips & variations

  • Frozen mango chunks, thawed, work fine when ripe fresh mango isn't in season.
  • A splash of coconut cream folded in alongside the whipped cream adds a tropical note.

Storage & reheating

Keeps well frozen, tightly covered, for up to 2 months. Let sit at room temperature 5-10 minutes before scooping if it's been frozen solid.

Tips from the Tulo kitchen

  • Chill the mixing bowl and beaters in the freezer for 10 minutes before whipping the cream, cold equipment whips air in faster and holds stiffer peaks.
  • Press a piece of plastic wrap directly onto the surface before the lid goes on, it keeps ice crystals from forming on top during the long freeze.

FAQ

Do I need an ice cream maker for this?

No, this is a no-churn method. The whipped cream folded in provides the airiness a machine would normally churn in, so a freezer is the only equipment needed.

Why is my no-churn ice cream icy instead of creamy?

Usually under-whipped cream (it needs to reach stiff peaks) or a mango puree with too much water content. Strain very juicy mango puree slightly before mixing it in.
