Pickled Beets Recipe

Instructions

  1. 1Place the beets in a large pot, cover with water, and bring to a boil. Simmer 35-45 minutes, until tender when pierced with a knife.
  2. 2Drain and let the beets cool just until safe to handle, then rub off the skins with a paper towel and slice into rounds or wedges.
  3. 3While the beets cook, combine the vinegar, water, sugar, salt, cloves, cinnamon stick, and peppercorns in a small saucepan and bring to a boil, stirring until the sugar dissolves.
  4. 4Pack the warm sliced beets and red onion into clean jars.
  5. 5Pour the hot brine over the beets, making sure they're fully submerged, and let cool to room temperature.
  6. 6Seal and refrigerate at least 24 hours before eating for the flavor to develop, they're best after 2-3 days.
