How to Make Ribs in the Oven

Ribs don't need a smoker to turn out tender and fall off the bone, the oven does the same job as long as the membrane comes off, the heat stays low, and the ribs spend enough time wrapped tightly in foil before any sauce goes on.

Steps

  1. 1Preheat the oven to 275°F (135°C) and line a rimmed baking sheet with foil.
  2. 2Flip the rack of ribs bone-side up and slide a knife under the thin membrane at one end. Grip it with a paper towel and peel it off in one motion; this membrane blocks seasoning and turns rubbery if left on.
  3. 3Pat the ribs dry, then coat both sides with a dry rub (a mix of salt, brown sugar, paprika, garlic powder, and black pepper works well). Press the rub in so it sticks.
  4. 4Wrap the rack tightly in two layers of foil, bone-side down, sealing the edges so no steam escapes.
  5. 5Bake for 2.5 to 3 hours for baby back ribs, or 3 to 3.5 hours for spare ribs, until the meat has pulled back from the bone ends and a fork slides in with almost no resistance.
  6. 6Carefully open the foil (hot steam will escape) and brush the ribs generously with barbecue sauce.
  7. 7Return the ribs, uncovered, to the oven and broil or bake at 425°F (220°C) for 8-10 minutes, until the sauce is bubbling and starting to char at the edges.
  8. 8Rest for 5-10 minutes before slicing between the bones.

What internal temperature should oven-baked ribs reach?

Ribs are done around 195-203°F (90-95°C) internally, well past the 145°F safe minimum for pork, because collagen needs that higher heat over time to break down into gelatin.

Should I use foil for oven ribs?

Yes, wrapping tightly traps steam that braises the meat from the inside, which is what makes oven ribs tender without a smoker. Leaving them unwrapped for the full cook dries them out.

Do baby back ribs and spare ribs take the same time in the oven?

No. Baby back ribs are leaner and thinner and need about 2.5-3 hours at 275°F, while spare ribs are larger and fattier and need closer to 3-3.5 hours.

Can I make oven ribs fall-off-the-bone versus have a slight bite?

For fall-off-the-bone, bake the full time range until the meat pulls back noticeably from the bone ends. For a firmer bite-through texture, pull them 20-30 minutes earlier and check that a fork still meets slight resistance.
