Instructions

  1. 1Grate the potatoes and onion together on the coarse side of a box grater into a large bowl.
  2. 2Transfer the mixture to a clean kitchen towel and wring out as much liquid as possible over a bowl or sink.
  3. 3Let any collected liquid sit a moment, then pour off the water and keep the starch that settles at the bottom, stirring it back into the potatoes.
  4. 4Mix in the eggs, flour, salt, and pepper until evenly combined.
  5. 5Heat about 1/4 inch of oil in a large skillet over medium-high heat until shimmering.
  6. 6Drop heaping spoonfuls of batter into the oil, flattening slightly, and fry until deep golden, 3-4 minutes per side.
