  • 2 medium eggplants, cut into 1-inch cubes
  • 1/3 cup olive oil
  • 4 cloves garlic cloves, thinly sliced
  • 1 tbsp fresh thyme leaves
  • 1 tbsp fresh oregano, chopped
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 2 tbsp fresh parsley, chopped, for serving

Instructions

  1. 1Preheat the oven to 425°F (220°C) and line a large sheet pan with parchment.
  2. 2Toss the eggplant cubes with olive oil, salt, and pepper, spreading them into a single layer with space between the pieces.
  3. 3Roast for 20 minutes, then flip the pieces and scatter the garlic, thyme, and oregano over the top.
  4. 4Return to the oven and roast another 10 minutes, until the eggplant is deeply golden and tender all the way through and the garlic is soft.
  5. 5Transfer to a serving dish and scatter with fresh parsley.

Refrigerate leftovers in an airtight container for up to 4 days. Reheat in a 400°F oven for about 8 minutes to recrisp the edges, a microwave will work but leaves it soft.

FAQ

Do I need to salt the eggplant before roasting?

Not for this recipe. High-heat roasting drives off enough moisture on its own, salting ahead of time is more useful for frying or grilling where you're trying to prevent sogginess in a shorter cook.

Why isn't my roasted eggplant browning?

Most often the pieces are too crowded on the pan, or the oven isn't fully preheated. Give the cubes space and make sure the oven has come all the way up to temperature first.
