How do I keep beets from staining my hands and cutting board?

Wear disposable gloves while peeling and cutting, and use a cutting board you don't mind staining (or line it with parchment). The stain is just pigment and washes off skin with soap and time, but can linger on porous surfaces.

Do I need to peel beets before roasting?

No, roast them whole with the skin on, wrapped in foil, then the skin slips off easily by hand once they're cooked and cooled slightly. Peeling raw beets first is messier and unnecessary.
