Instructions

  1. 1Preheat the oven to 400°F (200°C). Wrap each beet individually in foil and place on a sheet pan.
  2. 2Roast for 45-60 minutes, until a knife slides easily into the center of the largest beet.

  4. 4Whisk together 2 tablespoons of the olive oil, the balsamic vinegar, mustard, honey, and salt in a small bowl.
